Good Afternoon Lovelies!
So I have to confess something… I’ve fallen off the proverbial bandwagon and have been eating junk recently. (My mind is telling me no, but my body’s telling me yes!) As an effort to get back on track with some healthy meals, I decided to pursue a tasty salad for this week’s recipe: Buffalo Chicken Salad!
Sporting a variety of flavors from the buffalo chicken, to the avocado, to the black beans and is a salad, I feel better about myself. (It’s the small things in life, like lettuce.)
Below are the ingredients you will need for this healthy meal!
2 Chicken Breasts
1/4 Head of lettuce – chopped
1/4 Cup of corn
1/4 Cup of sliced scallions, chives OR green onions
1/4 Cup of black beans
1/2 Avocado – diced
1/4 Cup of cherry tomatoes – halved
1/4 Cup of cucumbers – diced
1/4 Cup of Frank’s Red Hot
Ranch dressing – to taste
So basically, this recipe is super simple with measurements, as all but 2 ingredients are 1/4 cup. (Trying to make things easy over here!)
Frist, put on a pot of water and bring it to a boil. Make sure you have enough water to cover your chicken breasts, as that will ensure the chicken will cook evenly.
Once the water gets to a rolling boil (lots of bubbles) add your chicken breasts and let boil for 15 minutes.
Just a Little Tip (JLT): I recommend taking out whichever breast is bigger (not like that! or maybe yes….) and cut it in half to verify that the chicken is cooked all the way through. Since we will be shredding the chicken, you don’t have to be concerned about the integrity of the chicken and the knife mark you heathens just made in it! Que horror!
Once the chicken is cooked all the way through, remove it from the pot and put it on a cutting board. Use two forks, one to stabilize the chicken and the other to shred, and pull away from each other. Shred the chicken and put it into a mixing bow.
After you’ve successfully shredded your chicken, add your 1/4 cup of hot sauce. If you like your buffalo chicken spicy, feel free to add more. I was cooking for someone who hasn’t been excessively consuming hot sauce like me for the past 10 years, so I made it lighter. (See, I AM a nice person, dammit!)
Mix the shredded chicken with the sauce and then you are ready to plate, or bowl in this case.
I layered in the following manner:
Scallions, chives OR green onions
