Good Morrow Ladies and Gents!
Have I got a delectable recipe for you this week: Figs, Brie and Berries, oh my!
I’ve had figs on my mind for the past week and have been trying to come up with a unique and interesting recipe that would incorporate said craving. I came across a recipe where there was soft cheese baked in the fig and decided to put my own little spin on it. I decided to use brie, because let’s be honest, brie is one of the eight wonders of the world. I also decided to keep with the deep rich color theme and utilize blueberries and blackberries as accent flavors. (Watch out Christian Grey, we’ve got 50 shades of blue coming at you!)
Below are the ingredients that you will need for this delicious recipe.
6-8 Figs – stemmed
2-3 Blackberries – quartered
6-8 1/4″ Blocks of Brie
Start by cutting an “X” into the top of the figs after you stem them, almost as if you would quarter them, but don’t cut all the way through. Next, place the small blocks of brie into the center of those “X” marks, place the fig and brie onto a sheet pan and bake at 350F for about 10 minutes, or until the figs are soft and the brie has melted.
Once they are done in the oven, they should resemble the below image. Yum!
From here, I add two blueberries and 1/4 blackberry to each fig. Once they are in season, I’ll be using pomegranate seeds, as that will give that extra pop of flavor, an additional texture and brighten the color of the dish with that vibrant red hue of the berries. Either way, I like adding a little sprig of Dill, to give a fresh clean bite to all of this rich flavor from the fig, brie and berries.
