Apple & Brie Grilled Cheese!

Good morning and welcome back my lovelies!

I hope everyone has been having a great start to 2016!   New year, new you and new flavors!

This week’s recipe is grilled cheese with apple, brie and mango pepper jelly!  It’s going to be an explosion of flavors!  So buckle up buttercup!


Listed below are the ingredients that you will need for this recipe:



2 Slices whole wheat bread

1/2 Granny smith apple

1 Handful of spinach


Mango pepper jelly (or fig jam)

First, start off by cutting 1/2 of the granny smith apple into thin slices:


Next, take 1/2 of the wheel of brie and cut into thin slices, removing the rind for easy melting.  Just a little tip (JLT): In order to cut the rind, use a knife and slice AWAY from you.  Nobody enjoys bloody brie.  Unless you are English and using “bloody” as an adjective.


Moving on!  Spread the jelly (or jam) on both slices of bread and add one layer of the brie:


Next, add a few slices of the granny smith apple for a crisp crunch:


Then add a handful of the spinach and an additional layer of brie and you’re ready for grilling!


Heat the skillet on medium and use a little oil for lubrication.  (Remember, lubrication is key for a variety of things in life 😉 )


Place the sandwich on the grill and add another heavy skillet on top:


In my case, I didn’t have another skillet, so I used a plate and my sugar container:


After 2-3 minutes flip the sandwich with a spatula.  (JLT: You may need to re-oil the grill lightly before placing the sandwich down):


Put the heavy skillet (or in my case plate with the sugar container) back on again for another 2-3 minutes until the brie is gooey, like above.

Lastly, cut the sandwich in half length-wise and you are ready to serve by itself, or with some soup!
