Happy Friday and welcome back!
Hope everyone had an incredible Memorial Day Weekend! If you haven’t been outside in the last few days, and have been living like a hermit, summer has arrived! Just in time for the holiday! Woo!
In celebration of summer, I have three recipes for you. THREE! THREE! All involving WATERMELON! (Shut the front door!)
1.) This week’s first recipe is Watermelon, Prosciutto & Brie!
This is a great appetizer to serve during BBQs and cookouts.
1/3 of Watermelon – cubed
Brie – cubed
First, cut the watermelon into 1-2 inch thick slices. Then cut off the rind and cube the fruit into 1/2in x 1/2in squares.
Just a Little Tip (JLT): As you are cubing the watermelon, I recommend putting it in a colander in the sink to drain any excess liquid. Don’t want it to be too juicy. (Said no man ever.)
Next, cut the brie into 1/2in x 1/2in squares, place on top of the watermelon chunk, add a bit of the prosciutto and push a toothpick through to keep them all nice together. The toothpick should act like Rose from Titanic. I’ll never let go Jack.
Next, drizzle lightly with some olive oil, balsamic glaze, and if you feel the need, salt.
Plate and wait for your guests to devour! Nomnomnomnomnom.
2. This weekend’s second recipe is Watermelon Pico de Gallo!
This is incredible as an appetizer with tortilla chips, or even as a topping for dinner over chicken or fish. The sweet and savory flavors combined are sure to dance across your tongue. (rarr) Let’s get this party started!
1/3 Watermelon – diced
2-3 tsp. Olive Oil
1-2 Jalapeños – seeded and diced
1 Yellow Pepper – seeded and diced
1 Green Pepper – seeded and diced
1 Red Pepper – seeded and diced
1/2 Red onion – diced
1 Lemon – juiced
Handful of Cilantro- chopped
1/2 tsp. Salt
This recipe is SUPER simple! Take all of the ingredients and chop them up and add them into a large mixing bowl.
Take a third of the cubed watermelon that was cut up and add it to the chopped up ingredients and mix together.
Voila! You have yourself a tasty, healthy, version of chunky Pico de Gallo!
3.) Last, but certainly not least, our third recipe is Watermelon & Feta Salad!
This is a great side salad for a summer dinner or lunch. The blend of watermelon, feta and mint is a refreshing combination of light ingredients that will leave your palate satiated.
1/3 Watermelon – cubed
3 Limes – juiced
1 Cup crumbled Feta
Handful of mint – chopped
1 tsp salt
There’s only one step in this SUPER simple recipe: mix all of the ingredients together and serve! BOOM!
Best part about all of these recipes, you don’t have to choose which is your favorite! I was able to create an ample amount of each recipe with just the one watermelon. The goddess of all melons!
