Mediterranean 7-Layer Dip!

Good day my lovely readers!

We are already half way through May and the weather is definitely turning in our favor here in Jersey! Alas, there is yet hope for a warm Summer!

With the weather being so lovely yesterday, a stunning 73F,  I decided to take advantage and went for a run on a local trail.  I love being outdoors, so it was nice to have a gorgeous day to do some jogging.  (Yes, I’m one of those people who actually enjoys running. GASP!)  And with this long awaited transition from a long, wet Winter, to a warm Spring, it’s got me thinking of BBQ season, which is fast upon us. (Rarr)

I recently attended a BBQ this past weekend, for Mother’s Day, and was trying to figure out a great healthy appetizer to bring over.  I did some searching on this little known contraption called the World Wide Web and came across a yummy recipe by  Cookin’ Canuck: Mediterranean 7 Layer Dip.  I made if for my family and they seemed to really like it!

It’s a super simple recipe that has a unique twist compared to traditional dips.  Follow below for a list of ingredients and the how-to for making this delicious spread!

Ingredients:

8-12oz Hummus (I use the Original flavor by Sabra)

1 Tomato – diced

1/2 Cup cucumber – diced

1/2-1 Cup non fat Greek yogurt

1-2 Cans of artichoke hearts – chopped (depends on how much you love artichokes)

2 Roasted red peppers (4 halves) – diced

1/4 Cup crumbled feta

2 tsp. Parsley – minced

1/8 tsp. Salt

1/4 tsp. Paprika

Kalamata olives – sliced (optional)

Now here’s the easy part, start layering!

Layer 1: Hummus: (There’s some hummus among us. HA! I do enjoy a good cheesy joke. You’re welcome.)

Layer 2: Tomatoes

Layer 4: Greek yogurt, salt and paprika

Layer 5: Artichoke hearts.

Just a Little Tip (JLT): I would recommend patting the artichoke hearts dry with a paper towel or clean towel (as opposed to a dirty towel, unless you’re into that). That way your dip doesn’t become too wet. (I’m not going to even go there 😉 )

Layer 6: Roasted red peppers

Last step: top with minced parsley and olives and call it a day!

It’s simple, abundant in flavor and healthy!
