Good morning and welcome back!
It’s good to be back home from my trip, but I must say that I do miss South Carolina and all of the southern men. Sigh… (Something about that southern twang and charm that just gives me tingles. Shudder…) CCMF was an incredible event and I’m definitely planning on going back again next year!
That being said, while I was away gallivanting, I tried thinking of healthy and easy lunch options that one could make. I happened to remember an awesome recipe I used to love making: Tuna Lettuce Wraps!
Listed below are the ingredients you will need for this healthy lunch.
1 Can of tuna fish (I prefer in oil)
1-2 Leaves of lettuce
1/4 Tomato- diced
1/4 Onion- diced
1 tsp. Mayo
1/4 Cup of shredded cheddar cheese
Salt – to taste
Pepper – to taste
Frank’s Red Hot
First, open the can of tuna and drain the excess liquid into the sink.
Just a Little Tip (JLT): I recommend having the faucet running to help reduce the fishy smell. Yum…
Take a fork and empty the contents of the tuna fish can into a bowl. Use the tines to smash the tuna fish into smaller pieces, like so:
Then add the mayo, salt, pepper and onions and stir together.
Next, dice up the tomatoes.
Lastly, grab your lettuce and let’s start layering! I do tuna salad, shredded cheddar, diced tomatoes and Frank’s!
If you want to get all fancy and shit, you can wrap up the lettuce and use a toothpick to hold it together. There should be enough tuna salad to fix two lettuce wraps. One for you, and one for your boo!
