Hope everyone had a lovely weekend. I know the weather has been a bit fickle over here in New Jersey, kind of like a battle over the house thermostat, however this weekend was beautiful and made it feel like Spring is just around the corner. That being said, I wanted to have this week’s recipe reflect that Spring time feeling, and for me that means adding more veggies to my diet. So today we are going to learn how to prepare a simple side dish, or appetizer, of Zucchini Pizza!
It’s a healthy alternative to actual pizza, which is sure to delight. (Similar to an afternoon delight, but without the necessary shower afterwards. And yes, I understand zucchini is not a substitute for actual pizza. That would be like trying to equate solo-playtime to partner-playtime. Each has their own purpose and time, but are not on the same level. Apologies, something about zucchini gets me frisky apparently. Perhaps the shape…)
Anywho! Forthwith regarding our recipe! Below are the ingredients you will need to prepare this at home:
3 Zucchinis – sliced in half lengthwise and then again widthwise (you should have 12 pieces in total afterwards)
1/2 Cup parmesan cheese
1/2 Cup mozzarella cheese
2 Tsp olive oil
1-2 Tsp fresh Rosemary and Thyme – minced
Salt and Pepper to taste
Start by pre-heating the oven to 375F. Then put the cut up zucchini on a baking sheet that’s covered with aluminum foil. Use a brush to apply a thin coating of olive oil to each zucchini boat.
In a small bowl, combine the salt, pepper, cheeses, Rosemary and Thyme and mix together.
Evenly distribute the cheese mixture over the zucchini boats and then pop into the over for 15 minutes:
To get a crisp brown coloring, after baking broil the zucchini pizzas for 3 minutes.
Voila, you’ve created a super simple and healthy side dish, or appetizer, that will hit the spot and not leave you feeling guilty. (Trust me, there are other things that you could be doing to make you feel naughty. 😉 )
